Waymar Gin House’s flagship gin is a combination of two separate distillations. The first is what they describe as a “traditional London Dry base.” This one features some of the more common botanicals like coriander, orange, orris root and notably— both angelica root and angelica seeds. The second distillation is a bit more contemporary featuring vanilla, cucumber, and rose. Both botanical distillations are done via vapor, rather than maceration.
The two gins are blended and bottled to create Waymar Gin House Signature Dry Gin.
Tasting notes
Aroma: Brightly citrus-forward with orange rind that sings orange marmalade. Hints of juniper, lemon peel, vanilla and rose add complexity. But it’s a beautiful citrus-forward aroma.
Flavor: Complex and evolving. I might characterize Waymar Gin House Signature Dry Gin as generally having a citrus-forward impression, but there’s a lot more here.
Early spruce buds with vibrant orange zest. Mid-palate, there’s a touch of orange custard with hints of vanilla bean lending a marzipan and almond like sweetness.
Orange and lemon ease into a finish where the spruce buds become rounder, showing some green juniper. Spice begins to come on late. Combined, it suggests a faint echo of pumpkin pie spice, with deluicate hints of allspice and cinnamon.
Finish: Subtle spice, terpey juniper and oily orange rind. Beautiful texture with a soft mouthfeel and a long lasting finish where bright botanicals hang on. What is also worth commenting on is that while Waymar Gin House Signature Dry Gin has a long presence on the palate, it’s not warm or hot.
Cocktails and suggested serves
My top recommendation for Waymar Gin House Signature Dry Gin is to try it in a Martini. Try a 5:1 ratio, and garnish with a twist. The beautiful aroma is a huge add to sit along side that soft, complex palate.
Otherwise, I found Waymar Gin House Signature Dry Gin to be a good gin for mixing. Bold enough botanically to shine in a Negroni, it’s also works great in a Gin and Tonic or Gin and Soda. Especially in the latter it can add a note that makes it taste as if it was mixed with a very delicate orange seltzer.
Personally I preferred mixing this gin with unflavored tonic or soda waters— in order to emphasize the beautiful botanicals.
Overall, Waymar Gin House Signature Dry Gin
Great nose. Smooth palate. Complex botanicals that unfold over time. Waymar Gin House Signature Dry Gin is a great example of a contemporary gin that celebrates juniper.
Bartenders will find it an easy gin to work with behind the bar, but most importantly gin fans across the gin-preference-spectrum will be able to find something to love about a balanced and well-designed gin.
