Port Chilkoot’s 50 Fathoms Gin is combined with foraged spruce tips for an 8% ABV Canned Cocktail that is truly it’s own thing— a spruce and soda?
Tasting notes
Color: Hazy, ivory.
Aroma: Terpey and slightly herbal, hints of pine, nettle, tangelo and a hint of coconut. Spruced Up Gin highlights the more citrusy side of spruce buds, at least on the aroma.
Flavor: Resinous pine, bright citrus with hints of lemon and orange— the citrus becomes stronger mid-palate as juniper comes through. Moderately fizzy, the fizz is especially concentrated early. it dissipates quickly. Perhaps slightly fizzier than a beer, but nowhere the level of fizz you’d get from a seltzer.
Finish: Citrus, especially sour lemon with a touch of green juniper.
Overall, Spruced Up Gin
Spruced Up Gin is a beautiful show case of spruce and lemon flavors— while those notes do dominate, the underlying gin is always present.
Folks who want a fizzy gin cocktail without tonic water will enjoy this. There might be enough lemon in here, that fans of gin and lemonade should seek this out. Further fans of juniper flavor, especially it’s piney side, will appreciate the way spruce adds more volume to that note.
Overall, it’s a beautifully balanced RTD. It’s easy-to-drink and keeps the gin at its center,
