Notes on the White Negroni

The White Negroni was a particularly popular riff on the equal parts Negroni in the 2010’s.

Though it originally started as an “equal parts” substitution, it quickly became clear that some of the ingredients’ relative strengths weren’t as in sync.

Rather than hold the holy ratio in high esteem bartenders found that amplifying the gin and dialing down the Suze made for a much more balanced drink. It’s still much more bitter and a bit more of an acquired taste than the original. Appreciated on its own merits, the White Negroni is a beautiful cocktail— both in flavor and presentation.
